Just a quick post (remember how I was telling you that we can have it all, just not all at once? Yep. Fall colds, teething, and lack of cleep got the best of this household last night! Blogging was just not possible.) to share a new crock pot recipe I whipped up last night. I just used ingredients I had on hand, and it turned out wonderfully!
Lemon Dilly Chicken
Ingredients:3 or 4 boneless, skinless chicken breasts
1 1/2 c. chicken broth
1/2 a small onion, quartered
2 cloves of garlic, peeled
3 tbsp lemon juice
2 tsp lemon dilly spice from Epicure (If you don't have this, you can substitute the zest from 1 lemon, some fresh or dried dill, and some garlic powder)
fresh lemon slices
pepper to taste
Place thawed chicken breasts in crock pot. Mix chicken broth and lemon juice together, and pour over chicken. Sprinkle lemon dilly seasonings, and pepper over chicken. Place chunks of onion and garlic cloves around the chicken, in the juices. Place 1 slice of lemon on each chicken breast. Cook on medium for 4 hours.
I served mine with wild rice, and steamed veggies :) YUM! It was a big hit, even with the kids.
